No brain, no sense of pain – and yet they are extremely effective: oysters are considered the silent helpers of the seas. They filter water, protect coastlines and leave hardly any traces in the ecosystem. In Brittany, the Cahue family has been breeding these special shellfish for generations. Oysters were once considered poor people's food. Later, they became the epitome of fine dining – even Casanova swore by their effects. Lucie shows how versatile they can still be today: gratinated with salicornia, refined with nuts or interpreted sweetly with buttermilk and apple.
